Spicy Pasta with Ham and Olives

Description:

Spicy summer recipe

Ingredients:

  • 4 ounces of pasta (whichever type you prefer)
  • 2 tablespoons olive oil
  • 1/2 onion, finely chopped
  • 1 tablespoon finely chopped red chili pepper
  • 4 ounces cooked ham, cut into small cubes
  • 4 ounces sliced green olives
  • 4 ounced sliced black olives
  • 1 can chopped tomatoes, undrained
  • Parmesan cheese to garnish

Method:

  1. Cook the pasta in a pan of boiling water, until al-dente. Drain and keep warm
  2. Saute the onion and chili pepper in olive oil, until transluscent (5-7 minutes).
  3. Add the ham, olives, and tomatoes with the juices. Cook until heated through - about 10 minutes.
  4. Combine the ham mixture with the pasta, and stir gently to coat the pasta.
  5. Garnish with parmesan cheese, as you like.
