Yakitori - Grilled skewered chicken

Description:

Yakitori is grilled chicken on scewers. Any meat from the chicken can be used for yakitori. This recipe is prepared with chicken thighs and leek.

Ingredients:

  • Chicken thighs
  • Japanese leek (negi), leek, or green onion
  • 4 tablespoons of soya sauce
  • Mirin or sake
  • 3 tablespoons of sugar
  • Honey

Method:

  1. Skin and de-bone the thighs
  2. Mix together the soya sauce, sugar, a tspn of honey, a small shot bit of sake and water, and heat it up until it's homogenous.
  3. Cut the chicken thighs into pieces suitable to use on skewers.
  4. Put the chicken pieces into the marinade, and let it stand for a an hour or so.
  5. Cut the leek or green onions in about 3 cm long pieces
  6. Thread three or four pieces of chicken and some leek on each skewer.
  7. Grill or barbecue the skewers.
