Welsh Cakes

Description:

Traditional Welsh flat cakes, best cooked on a flat iron griddle.

Ingredients:

  • 1lb self-raising flour.
  • 8oz butter
  • 8oz granulated sugar
  • caster sugar for dusting
  • 8oz currants
  • Teaspoon of mixed spice
  • Half teaspoon salt
  • 2 large eggs and a drop of milk

Method:

  1. Rub the fat and flour together until crumbly and then add all the other ingredients except the eggs and milk.
  2. Mix thoroughly, and then add the eggs.
  3. Add the milk slowly while mixing, to get the right consistency.
  4. The mix should not be too sticky as it is difficult to roll.
  5. Roll out - not too thin, about a quarter of an inch thick - and use a 2" cookie cutter to cut into rounds.
  6. Cook on a griddle or hot plate and turn once when brown.
  7. Dust with a little caster sugar to serve.
